Vegan Brioche / Croissant (attempted version)

So I attempted to make some vegan croissants – or brioche as they are called in Italy (a brioche is just simply a croissant-type biscuit :))

I can say as far a deliciousness level – they were very yummy!
Visually, however – let’s just say that it takes a little bit of imagination to actually see a croissant like form 🙂
BUT – there was no waiting time for this recipe, apart from preparation and baking time – so that was good!

Here’s what I did for ingredients:

300gr Whole Wheat Flour
100g Chickpea Flour
a lot of coconut oil
a slight amount of raw cane sugar, about 50 grams.
and cinnamon on top

Mix the flours together along with the sugar. Roll it out with a rolling pin. Then slather the coconut oil on the top. After you have a nice thick layer of the coconut oil, then fold your rectangular shaped dough in 3. Roll it out again, then slice into triangles to be able to roll up into the “croissant” shape.

Mine were mini ones. Let them bake until nice and golden brown and enjoy with a hot cup of tea or an espresso.

A lot of recipes called for lievito, or yeast. I never cook with yeast. And although the recipes do not “rise”, they still turn out and taste pretty good! If you don’t like the yeast, just leave it out of the recipes.
