Fennel

il_finocchio_01Fennel is a popular vegetable to eat in Italy. Called finocchio it is a crunchy, fresh tasting vegetable that can be eaten raw or cooked. In Italy it is very common and a more economical vegetable to purchase.

Many confuse it for Anice and although they come from the same plant family and have a similar taste of liquorice, they are two different plants.

Raw fennel is great to eat in salads or simply as a snack. It is great for the digestive system and helps to freshen the breath.

A popular salad recipe with fennel includes cutting up the fennel. Then simply adding salt, pepper, olive oil and a bit of lemon juice. It comes out very nicely and can compliment a plate of potatoes with grilled seitan!

the di finocchioFennel seeds are used frequently to make a hot tea. The seeds can be gathered directly from the plant and can be dried or used immediately. Simply add a teaspoon or two to boiling water, then let steep for a few minutes.

Seeds can also be thrown into breads or cookie mixes for a liquorice flavor.

You can also saute’ them in a bit of olive oil, grill them, or bake them in the oven. The texture is a lot like a carrot; it is a hard vegetable so is very versatile in different recipes.
