Today we have a delicious all naturally vegan traditional Italian recipe from the region of Piemonte! You can also find it in Liguria. The recipe is really easy to make, requires few ingredients and is full of protein! It’s quite a treat for the taste buds, too 🙂
The “Farinata” is chickpea flour, water, salt and olive oil. It actually has Greek and Latin origins, but has a famous legend that goes along with it. It apparently was invented during 1284, when Genova defeated Pisa in the Battle of Meloria. One of the ships full of prisoners got caught up in a terrible storm wreaking havoc inside the boat. Olive oil spilled and got mixed with the sacks of chickpea flour, not to mention the seawater that entered the vessel and got mixed up with the flour. The seamen tried to salvage as much as they could and end up leaving the oil/saltwater/flour mixture out in the sun. It eventually dried into a flatbread like form. The seaman discovered it was quite tasty and called it the “Gold of Pisa”.
Ingredients:
Chickpea Flour
Water
Salt
Olive Oil
For every 1 part of flour, use 3 parts water. (100 gr flour=300 gr water, for example) Then add olive oil and salt to taste. Mix everything together and let it rest about 20-30 minutes. It should be quite liquid, because it will cook in the oven. Let it cook in the oven for 20 minutes at 250 C (400 F)
You can also add rosemary (personally my favorite), oregano or other spices. Sometimes onions or olive are added too.
When you take it out it may be a little soft yet, that’s OK. It will start to harden as it cools. This is a great item to bring to parties because it’s easy to make and goes good with anything! And of course, as always, is Vegan!
