Here is a healthy dish that is made with basic ingredients and has a lot of flavor!

Vegan Potato-Cabbage Bomb
Ingredients:
7 medium/large potatoes
10 large cabbage leaves
4 medium/large carrots
2 small white onions
2 cloves of garlic
1 cup frozen peas
1 cup seitan
Herbs and Seasoning:
EV Olive Oil
Rosemary
Rubbed Sage
Nutmeg
Start first by putting some olive oil on the pan so it doesn’t stick. Then chop 3 potatoes and create the first 2 layers so there is some “foundation” on the bottom of the pan to avoid it from sticking. Add a little bit of olive oil again. Chop 2 carrots and put them on the potatoes. Then chop 1 onion and complete another layer. Proceed to chop ½ of seitan and sprinkle it to form the 5th layer. Add ½ of the frozen peas on top. After that add some herbs and seasoning. Sprinkle rosemary, rubbed sage and nutmeg.
Then “close it all” with the 6th layer by adding 5 big cabbage leaves on top of it all.
We created another layer exactly following the above system with a little twist. We skipped the herbs and seasoning of the step above to leave them as a last thing. Just leave the last potato to create the upper layer and then add some olive oil and herbs and seasoning on top. Cover the pan with aluminum foil to give it a bit of a stewed effect. Let it cook for about 45 minutes and 350 degrees F, check it out and if cooked thoroughly (you should be able to pierce a fork easily through it), remove the aluminum foil and leave it in the oven for another 15 minutes at 400 F to create a little crust. Enjoy the bomb!
