Ciao a tutti! We have a pancake recipe for you today!! Pancakes don’t exist in Italy. In fact, breakfast is not really an Italian tradition, so for breakfast it’s usually a quick espresso and croissant.
However, my husband, 100% Italian that he is, has grown very accustomed to these delicious pancakes and large breakfasts…I know you will like them too! 🙂
Ingredients:
1 1/2 cups wheat flour (for gluten free almond flour works too)
Sunflower seed milk as needed, depends how thick you want (for more robust taste, otherwise you can use water)
1 large mango, or banana if you want banana pancakes (also very yummy!)
4 pitted dates
cinnamon
2 tablespoons stevia extract
2 pinches salt
fresh ginger
2 handfuls of sliced almonds
Mix flour with sunflower seed milk. Then add mango, dates, cinnamon, stevia, salt, ginger and almonds. Mix together until it arrives at a good consistency.
Put some olive oil or coconut oil in your pan, then spoon pancake mix into pan for the measure pancake you want. Wait a few minutes for each pancake to cook inside. It should be toasty brown on the outside.
Then you are ready to eat! Buon appetito!!
*Makes 6-12 pancakes.
