Desserts for Carneval: Frittelle di mele con pasta madre (fried sweet apple fritters) VEGAN
Fried sweet apple fritters are a typical sweet dessert made for Carneval and are most popular in the regions of Lombardy and Trentino. There are several different types and the tricks to making the perfect ones for Carneval are usually kept very secret!
The pasta madre (dough) is pretty much the same type of dough you will use for bread, pizza, focacce and it also works perfectly for sweets.
Ingredients:
For the dough
100 grams of flour
water
To make 20 fried fritters:
Dough (cooled in fridge)
250 grams of white or wheat flour
100 grams of natural cane sugar
50 mil of extra vergin olive oil
juice of half lemon
frying oil (vegetable oil works well)
powdered sugar (as needed)
one pinch of cinnamon
one pinch of salt
one apple
water
To prepare:
After making the initial dough, if you leave it in the fridge, make sure you let it sit for a few mintues out of the fridge to reach room temperature. Start by putting the ball of dough into a bowl. Begin pouring little by little tepid water into the dough mix, doing it in a way that it starts to soften the dough and then begin to mix it with your fingers. Then add 100 grams of flour, or however much is needed to begin to work the dough in a way that it returns to the same consistency.
Separate half of the dough and put it in the bowl. Cover the bowl with plastic wrap. With the dough thats remaining in the bowl, start making the balls for the FRITTELLE, adding the lemon juice, salt, cinnamon, oil, natural cane sugar, flour and enough water to obtain a homogeneous mixture. Work it with the hands a few minutes.
When the dough is ready, put it back into a covered bowl, its best to cover it with a humid cloth and let it stay there for 8 hours. It is best to make the dough at night and then the FRITTELLE the next morning so you can enjoy the fried apple fritters the same evening.
When the dough is ready, wash and cut the apples into cubes. You will then begin to mix the apple cubes into the dough. You can also choose to mix the apple cubes into each ball of dough, just depends how you want to do it. After all the apple is mixed with the dough, begin to form small balls with the apple dough. When all balls are made, let them sit about a half hour. After half hour you can begin to fry the apple dumplings in boiling oil until they are a golden brown on the outside. They should be crunchy on the outside and soft on the inside.
If you like, you can roll them in powdered sugar for an added sweetness.
***AND, if you dont want to fry them, you can bake them too!! Do everything the same and instead of preparing them to be fried, you can bake them 20-30 minutes, depending on your oven at 350F.
